16oz orzo pasta
4 T butter
1/2 of a big onion (or 1 med onion), minced
2c favorite bottom shelf champagne (or white wine)
4c prepared chicken stock
~4T chives, chopped
8oz grated parmesan
DIRECTIONS:
In a big saucepan, melt butter. Add in onion and sautee ~5min.
Add in orzo pasta and cook for ~1min, stirring constantly.
Add in wine, stock, and chives. Bring to a simmer over med-high heat. Turn heat down and simmer for ~15 min or until the liquid is absorbed by the pasta, stir occasionally.
After liquid is absorbed, stir in parmesan and remove from heat.
