Chorizo Breakfast Quiche

INGREDIENTS:
12oz chorizo
1 small onion, diced
pinch of minced garlic
3oz real bacon pieces (or chopped, cooked bacon)
diced green chilis (I used half a small can)
shredded cheddar (~1 cup)
1 roma tomato, diced
~10 spinach leaves, chopped
3 eggs
1c cream
3/4 c milk
cumin powder, to taste
pepper, to taste

*pie crust:
1c flour
1/2 t salt
1/3c shortening
2T water (slightly more as needed)

DIRECTIONS:
Heat medium skillet over med-high heat, cook chorizo, onion, and some minced garlic.
Drain on paper towel & set aside.
Preheat oven to 375F.
Make dough: Mix the flour & salt. Stir in the shortening. Add in the water & mix. (I had to add more water, I kept adding a tiny bit at the time until the dough held together).
Spread the dough in a greased pie pan.
Layer in the chorizo mixture, then bacon, chilis, shredded cheese, tomato.
In a bowl beat the eggs then mix in the cream, milk, spinach, cumin, pepper. Pour mixture into the pie.
Bake ~45-50min.

*note We thought the pie crust was bland & next time going to make the "pie crust" out of shredded or pressed hash browns. Also I'd use less milk/cream and add in a 4th egg.
