Twice Baked Potatoes

Modded this recipe and turned out awesome!

































INGREDIENTS:
8 baking potatoes
some olive oil & kosher salt mixed in a gallon ziplock bag (for coating the potatoes)

2 sticks butter, sliced/softened
6oz bacon bits
16oz lite sour cream
8oz shredded sharp cheddar (plus some for topping)
favorite potato seasoning/seasoning salt, to taste
pepper (to taste)

DIRECTIONS:
Preheat oven to 400F.
Coat the potatoes with the oil/salt. Bake on foil-lined, greased pan for 1 hour.
After potatoes are done allow them to cool off a little while you prep the filling.

Set oven temp to 350F.
Mix butter, bacon bits, and sour cream in a bowl.
Cut off the tops of each potato, carefully scoop out the innards and mash into the bowl.
Mix in the cheese and seasonings.
Fill each potato shell with the mixture, and top with shredded cheese.
Bake for 15-20min, till cheese is melty.
