INGREDIENTS
8 potatoes, cubed, skin on
12oz turkey bacon, cooked/chopped
16oz shredded sharp cheddar
12(ish) oz sour creamminced garlic (to taste)
salt/pepper (to taste)
(optional) onion
DIRECTIONS
Preheat oven 325F.
In huge pot, boil the potatoes for ~10min. If you boil longer it will come out more like a mashed potato casserole (like mine did). It was still good tho.
Meanwhile, cook the bacon and chop it up.
Drain the water from potatoes, then mix in the cheese/sour cream/bacon/garlic/salt/pepper.
Spread into baking dish(es) and bake for 45~60min
