INGREDIENTS
4 chicken breast halves (pounded to ~ 1/4" thickness)
4 big slices of swiss cheese
4 slices of honey baked (or regular) ham
1 egg
bread crumbs
1 cup heavy cream
1 T cornstarch
1/2 cup champagne (or white wine)
1 t chicken bullion
DIRECTIONS
Preheat oven to 375F.
Slice chicken breasts lengthwise and pound into 1/4" thickness.
Place slice(s) of ham and cheese on the chicken and roll up. Secure with toothpicks.
Dip the chicken rolls in egg and breadcrumbs.
Brown chicken on skillet with olive oil over medium heat for about 10 min.
Bake chicken in oven for 20-30min (until cooked).
while chicken is baking make sauce:
In medium saucepan combine the heavy cream, wine, cornstarch, and bullion. Let simmer for about 10 min then remove from heat. Pour sauce over chicken then serve.
