INGREDIENTS
2-3 chicken breasts, cooked & shredded (I cooked in slow cooker)
2 (14oz) smoked sausages, sliced
1 c olive oil
1 c flour
2 T minced garlic
3 cans chicken broth (low sodium)
12 oz of your fav beer
1 can diced tomatoes (or rotel)
1 can crushed tomatoes
4-6 stalks celery, diced
1 sweet onion, diced
1 can chopped chile peppers
1 red bell pepper, chopped
fresh parsley, chopped
cajun seasoning
file powder to taste
DIRECTIONS
this needs a huge pot to cook in
In big oiled skillet combine the shredded chicken and sausage until browned. Drain and set aside.
In the large pot combine the olive oil and flour to make a roux. Stir until it turns brownish and bubbly. Mix in garlic and cook for another minute.
Gradually stir in the beer and chicken broth into the roux.
Bring to a boil, then add in celery, tomatoes, onion, chiles, bell pepper, parsley, and seasoning.
Reduce heat, cover, and let simmer for ~40min, stir every so often.
Add in chicken and sausage, and continue simmering for ~20 min.
(optional) serve over rice.
