Jumbo Stuffed Taco Pasta Shells

INGREDIENTS: (about 26 shells fills a 9x13)
1 lb ground beef
1 packet taco seasoning
1 jar salsa
1 can enchilada sauce
1 box of jumbo pasta shells
12oz cottage cheese
shredded mexican cheese
shredded cheddar cheese
sour cream (optional, serve on the side)

DIRECTIONS:
Boil the jumbo pasta shells, then drain and set aside.
Cook the ground beef in a large skillet, drain out the slime then add the taco seasoning to it with a little bit of water and simmer for a few min.
Preheat oven to 425F.
In a big bowl combine the cottage cheese, 8oz shredded cheese, and the ground beef.
Stuff each pasta shell with the mixture and place in a greased 9x13" baking dish.
Pour enchilada sauce over it and sprinkle 8oz shredded cheese.
Bake for 30min.

Note* I cooked ALL the pasta shells in the box, so I had enough to make an additional 8x8" pan of shells. I just filled them with leftover tortellini I had. So I had filled-pasta-filled-pasta lol.
