I didnt make this recipe, but I found this one and made it awesome!
INGREDIENTS: (makes 48 mini muffin tin cups) or u can use regular muffin tin instead
1 tube refrigerated pizza dough (a 13oz tube will make 48 in a mini muffin tin)
Shredded Provel cheese (if youre not in St. Louis sucks to be you, no provel in your area muahaha. Use mozzarella I guess.)
6oz real bacon bits (or cook/crumble you some bacon)
crumbled sausage (I used pre-cooked/crumbled turkey sausage, found in the sausage region of the groc store)
(optional) mini pepperonis
Pasta and/or alfredo sauce.
Italian seasonings, to taste
note: substitute/add any additional pizza toppings that you like!
I have made these in a jumbo muffin tin also (see bottom photos)
DIRECTIONS:
Preheat oven to 450F.
Grease the muffin tins. Sprinkle in some cornmeal if you want.
Roll out the dough with a rolling pin (preferably on parchment paper so it won't stick to the table) & cut into like 1 or 1.5" squares, Smush them into the muffin tin compartments.
In each muffin tin layer: tiny bit of cheese, little bit of alfredo, bacon, few pieces of sausage, bit of pasta sauce, 3 mini pepperonis, then top with glob of cheese.
Try not to get the cheese everywhere like I did in the 1st set of pics lol.
Bake for 10-12 min.
protip: to extract the mini pizzas from the tin run a knife around the edge of it to loosen them.
(or wait till they cool but who is that patient)
update: I made these for NYE 2014 and they weren't sloppy coming out of the tin haha. I put the shredded cheese in a bowl & microwaved for 10sec. It made the cheese malleable enough to form into an ovoid shape & set on top, rather than scattering shredded cheese everywhere. Brick or sliced cheese prob would work even better go for it & let me know how it works out.
