Jambalaya

recipe adapted from this
INGREDIENTS
this has a kick to it, cut back on seasoning to make less spicy
1 lb chicken breasts, cubed
3 (~21oz) Andouille sausage, sliced
28oz canned diced tomatoes in juice
1 onion, chopped
~8oz chicken broth
1 T dried minced onion flakes
2 t oregano
2 t dried parsley
2 t minced garlic
2 t Cajun seasoning (I used Weber brand)
1/2 t dried thyme
2 bags (8.8oz each) Uncle Bens instant rice

DIRECTIONS
In 7 quart slow cooker, place chicken and sausage.
Top with everything else except for the rice. Cook ~4 hrs on high, ~8 hrs on low.
Before serving: microwave the rice, and stir into the slow cooker.
