INGREDIENTS: (makes 9x13" pan)
5 russet/baking potatoes, washed (skins on)
3T butter, softened
1 pint whipping cream (or heavy cream)
1/2 c whole milk
2 T flour
4 pinches of minced garlic
salt & pepper (to taste)
8 oz shredded sharp cheddar (plus extra to sprinkle on top)
DIRECTIONS:
Preheat oven to 400F.
Slice potatoes into 1/4" - 1/2" slices. Then cut slices into fourths.
Bust out a 9x13" baking dish (I used one that was like 10x14", the potatoes were just spread thinner in it).
Grease baking dish with the softened butter.
In a bowl, mix together all the rest of the ingredients except the cheese.
In the baking dish layer 2 or 3 layers of: potatoes, milk mixture, shredded cheese.
Bake covered with foil for 30min.
Remove foil and bake an additional 20 min.
Sprinkle more cheese on and bake ~5 more min.
