Saw this slaw recipe in the June issue of Better Homes & Gardens. I improved it. We ate it over beer brats cooked man-style
INGREDIENTS: (serves 4)
6 brats (we got 3 regular and 3 jalapeno big brats from a badass local butcher shop) Slice or poke with fork so they dont explode.
1 large onion, chopped
12oz beer
1 stick butter
cracked pepper, to taste
buns (quality buns)
Blueberry Cucumber slaw:
~8oz mixed baby greens (see photo below of what I used) Can use spinach, or romaine, or whatever you prefer.
~12oz blueberries
1 cucumber, peeled and sliced then cut into 4ths
3-4 green onions, chopped
6oz crumbled feta
dried (or fresh chopped) parsely, to taste
few pinches of minced garlic
salt/pepper to taste
few scoops of lite mayo
buttermilk (I bought a 1/2 pint, and used like 1/2 of it maybe)
DIRECTIONS:
brats:
In an aluminum (or sturdier, as we discovered) pan place the onions, top with brats and butter, pour in the beer. Sprinkle with pepper. Place pan directly on grill and poach over medium heat for ~30min. Remove brats and cook on grill another 15 min until nice and done.
Meanwhile, remove the onions from the pan and carmelize in a small skillet on the stove with some garlic/teriyaki if you like.
slaw:
Combine everything in a big bowl, then refrigerate. Serve over the brats for (as described) a nice "yin-yang" effect
