INGREDIENTS
21 oz polish sausage, sliced into pieces
med/large onion, sliced
minced garlic (to taste)
46 oz (ish) beef broth
1.2 c water
1.5 c shredded (or sliced) carrots
28 oz stewed tomatoes
8-12oz pasta sauce
dried basil
bay leaf
thyme
oregano
bunch of fresh parsley, chopped
2 small red potatoes, peeled/chopped (I have subbed shredded hash browns before)
20oz beef tortellini (I used frozen ones in a bag, can use cheese)
grated parmesan
DIRECTIONS
Set out frozen tortellini so it thaws a little while you prep everything.
Chop up the sausage and cook for 5-10 min in a skillet. Remove sausage and set aside, reserving some of the sausage grease in the skillet. Cook onion and garlic in the skillet.
Meanwhile, pour the sausage, broth, water, carrots, tomatoes, sauce, and spices in a big pot over medium heat.
Add in the onion, bring to a boil; reduce heat and simmer for ~20 min uncovered.
Peel/slice potatoes, then add into the pot along with the tortellini. Simmer for another ~20min.
Serve topped with parmesan.
