This recipe is DELICIOUS! I used this with a little additions
INGREDIENTS: (3qt slow cooker was more than large enough)
1.5 - 2lb pork tenderloin (I used a pre-marinated "Lemon Garlic" flavor one from good ol Walmart)
1 onion soup packet
3/4c red wine (I used merlot & pinot something)
1c chicken broth or beef broth (I use whatever stock I have and make broth)
minced garlic, to taste
soy sauce, a few dashes
Worcestershire, a few dashes
dried rosemary, thyme, parsley (to taste)
cornstarch/water mixture, as needed (to thicken)
DIRECTIONS:
Place the pork tenderloin in the bottom of slow cooker.
Add in everything else (except for cornstarch) on top of it.
Cook for ~6 hrs on low, or ~3 hrs on high (till pork is 160F).
Remove the pork loin, slice, and set aside.
Mix cornstarch & some water in a separate bowl to make a slurry. Stir into the juices in the slow cooker to thicken the gravy. Add the pork back in until ready to eat.
Serve with mashed potatoes to utilize the extra gravy :)
*note* I have used the "Mesquite" flavor of tenderloin also, was very good if not better.
I have also used this recipe except also cut the pork loin so that it was flat, then rolled up spinach & cheese inside it before placing in the slow cooker (see bottom photos)
update: made this using pork chops in a 7qt slow cooker, used same ingreds in the slow cooker except: used 1/2 c beef broth, small dash of wine, can of "golden mushroom" soup. Layered chopped onion, then pork chops, then topped with mushrooms. Poured the sauce over.
