Found this recipe here. I used my own crepe recipe but added parm as they suggest
INGREDIENTS: (makes 4-6 crepes, depending on how large you make the crepes)
crepes:
1 egg
1 t salt
1c flour
1c milk
grated parmesan (about 1/3c)
a few green onions, chopped
filling:
half stick of butter
16oz (drained wt) canned sliced mushrooms
~1c fresh spinach, chopped
3oz real bacon pieces
minced garlic, to taste
4oz crumbled feta
8oz ricotta cheese
1 jar alfredo
DIRECTIONS:
Heat medium skillet over med-hi heat, add in the butter, mushrooms, garlic.
Add in the spinach and bacon.
After everything's warmed up add in a bit of alfredo, then xfer the mixture to a bowl. Add in the feta and ricotta. Wipe out the skillet and add it back to the stove over med-hi heat. Throw in some butter.
Prepare the crepe batter in a bowl.
Scoop at least 1/4c of crepe batter into skillet . Spread it out thin with a spatula, cook for a minute then flip it over.
Spoon filling into the crepe and fold it up. Set aside & keep warm.
Continue making crepes till the batter runs out. Serve topped with warmed alfredo.
note* this was good but it needed something else, like shredded chicken or sausage. Or more bacon. Also going to try using fresh mushrooms.
