Breakfast Muffins

recipe adapted from this

for muffin mix:
     2 c flour
     1/4 c sugar
     4 t baking powder
     1/4 t salt
     1 c milk
     1/4 c oil
     1 egg
     or use store-bought muffin mix (I used blueberry mix minus the blueberries, and it gave them a weird
     blueberry undertone. I would use regular plain mix next time).
Cubed ham
Crumbled bacon
Scrambled eggs
Shredded cheddar
4oz cream cheese (or Neuchatel)
4 oz "garlic cream cheese for baking"

Preheat oven to 400F
(skip this step if using pre-made miffun mix): In a bowl, combine flour, sugar, baking powder, salt. Mix the milk, oil, and egg, and add to the dry mixture.
Add the ham, eggs, bacon, cheddar to the muffin mix (reserving some cheddar for the topping).
Scoop the mixture into each muffin tin, filling it about half way.
Combine the cream cheeses and remaining cheddar in a bowl, and scoop some into the center/top of each muffin.
Bake for about 20min.
