Curry Chicken Salad

This tastes best after the flavors have melded in the fridge overnight!!
2 chicken breasts
1 stalk celery, diced
4 green onions, diced
1 apple, chopped
1/3 c craisins
Seedless grapes (around 1-2 cups)
1 cup sliced almonds (or preferred nut)
1 t curry powder (or more to taste)
1 c light mayo

Cook by cutting up chicken and boiling with a bouillon cube for 3min, then remove from heat and cover for ~15min. Then shred and cool in fridge while you prepare the rest. (or precook chicken in slow cooker).
Combine everything in a large bowl, and stir in mayo mixed with curry powder.
Serve chilled.
